Ingredients:
- 2 cups all-purpose flour
- 1 cup white sugar
- 1 cup chopped fresh strawberries
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 2 large eggs
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Cream Cheese Frosting:
- 8 oz. cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon pure vanilla extract
Instructions:
1. Preheat your oven to 350°F. Grease a Bundt cake pan with butter and flour, or use a non-stick cooking spray.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the eggs, one at a time, and mix until well-combined.
4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until well-combined.
5. Fold in the chopped strawberries until well-distributed throughout the batter.
6. Pour the batter into the prepared Bundt pan and smooth out the surface with a spatula.
7. Bake the cake for 50-60 minutes or until a toothpick inserted into the center of the cake comes out clean.
8. Remove the cake from the oven and let it cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
9. While the cake is cooling, prepare the cream cheese frosting. In a large mixing bowl, beat together the cream cheese and butter until smooth and creamy. Gradually add in the powdered sugar and vanilla extract and continue to beat until well-combined.
10. Once the cake is completely cooled, spread the cream cheese frosting over the top of the cake. Serve and enjoy!
Tips:
- For a stronger strawberry flavor, add in a few drops of strawberry extract or increase the amount of chopped strawberries in the batter.
- If you don't have a Bundt pan, you can use a regular cake pan or even make cupcakes instead.
- Make sure the butter and cream cheese are softened before mixing to ensure a smooth and creamy frosting.
- Add some fresh sliced strawberries on top of the frosting for a beautiful presentation.
