For the Panna Cotta:

  1. In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and vanilla bean.
  2. Heat the mixture over medium heat, stirring occasionally, until it comes to a simmer.
  3. Remove the saucepan from the heat and add the chopped white chocolate. Stir until the chocolate is completely melted and the mixture is smooth.
  4. In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes.
  5. Whisk the gelatin mixture into the warm cream mixture until completely dissolved.
  6. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.
  7. Divide the mixture evenly among six 6-ounce ramekins or custard cups.
  8. Cover each ramekin with plastic wrap and refrigerate for at least 4 hours or overnight.

For the Strawberry Coulis:

  1. In a medium saucepan, combine the sliced strawberries, granulated sugar, and lemon juice.
  2. Cook the mixture over medium heat, stirring occasionally, until the strawberries are soft and the mixture has thickened, about 10 minutes.
  3. Remove the saucepan from the heat and let the mixture cool slightly.
