Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 vanilla bean, split and scraped
- 4 ounces white chocolate, chopped
- 2 teaspoons powdered gelatin
- 2 tablespoons cold water
- 1 pint strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
Instructions:
For the Panna Cotta:
- In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and vanilla bean.
- Heat the mixture over medium heat, stirring occasionally, until it comes to a simmer.
- Remove the saucepan from the heat and add the chopped white chocolate. Stir until the chocolate is completely melted and the mixture is smooth.
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes.
- Whisk the gelatin mixture into the warm cream mixture until completely dissolved.
- Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.
- Divide the mixture evenly among six 6-ounce ramekins or custard cups.
- Cover each ramekin with plastic wrap and refrigerate for at least 4 hours or overnight.
For the Strawberry Coulis:
- In a medium saucepan, combine the sliced strawberries, granulated sugar, and lemon juice.
- Cook the mixture over medium heat, stirring occasionally, until the strawberries are soft and the mixture has thickened, about 10 minutes.
- Remove the saucepan from the heat and let the mixture cool slightly.
- Transfer the mixture to a blender or food processor and blend until smooth.
- Strain the mixture through a fine-mesh sieve into a small bowl.
- Cover the bowl with plastic wrap and refrigerate until ready to use.
To Serve:
- Remove the plastic wrap from the ramekins and run a knife around the edge of each one to loosen the panna cotta.
- Invert each ramekin onto a dessert plate and carefully lift the ramekin to release the panna cotta.
- Spoon the strawberry coulis over the top of each panna cotta.
- Garnish with fresh strawberries, if desired.
