Ingredients:

  • 1 1/2 cups sliced rhubarb

  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1 tablespoon milk
  • 1 tablespoon granulated sugar
  • 1 double pie crust (homemade or store-bought)

Instructions:

  1. Preheat your oven to 425°F (218°C).
  2. In a large bowl, combine the rhubarb, strawberries, sugar, tapioca, cinnamon, and salt. Mix well and let the mixture sit for 15 minutes to allow the tapioca to soften.
  3. Roll out half of your pie crust and place it in a 9-inch pie dish. Trim the edges to leave a 1-inch overhang.
  4. Pour the fruit mixture into the pie crust and dot with small pieces of butter.
  5. Roll out the second half of your pie crust and cut it into strips about 1/2 inch wide. Place the strips on top of the fruit mixture in a lattice pattern.
  6. Brush the lattice top with milk and sprinkle with granulated sugar.
  7. Bake for 15 minutes at 425°F (218°C). Reduce the heat to 375°F (190°C) and continue baking for another 45 minutes, or until the filling is bubbly and the crust is golden brown.
  8. Remove the pie from the oven and let it cool on a wire rack for at least 3 hours before serving.

This recipe makes one 9-inch pie, and it can be served warm or at room temperature. You can also top it with whipped cream or vanilla ice cream for an extra special treat.
